So I probably missed this somewhere in the text, but I'm scratching my head over why someone would take a Career with a 0 rating. Would this let someone say, "Kalnor briefly apprenticed to the local blacksmith (Blacksmith 0), so he would recognize whether this is a decent sword or not."?

Career 0 still gives you the skills for the career, you just don't get any bonus to your rolls.

So then a character with a career Physician 0 could try to heal someone but would make a roll of 2d6 plus the relevant ability? Basically it gives them a chance to use a skill, just no bonus?

Thats how it works, its mostly for the sake of roleplaying. Basically having a 0 career allows your character to have knowledge of that field. For example, my barbarian character would have no knowledge of medicine because he has not even a career that is relevant to that field of expertise, but a character with physician 0 would at least know the basics.

I've always had a bit of a problem with this part of the game. The rules as written do not appear to impede a character that does not have the relevant career/skill.
>To perform an action, you simply roll and add two regular six-sided dice (2d6)...If you are not fighting, you then add any appropriate career rank.<
Personally, if a character does not have the relevant career I will decide to either allow an unskilled attempt at the task but at a greater difficulty or, if the task requires a particularly specialised type of skill, I might rule that the character cannot attempt the task at all.
